Sous Vide Sirloin

Here’s an alternative recipe for sirloin steak prepared using the sous vide method:

Ingredients:

  • 2 sirloin steaks
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced (optional)
  • Fresh herbs like thyme or rosemary (optional)

Instructions:

  1. Preheat a sous vide immersion circulator to your desired level of doneness. For medium-rare, set the temperature to 130°F (55°C).
  2. Season the sirloin steaks with salt and pepper on both sides. You can also add minced garlic and fresh herbs like thyme or rosemary for additional flavor.
  3. Place each seasoned steak in a separate vacuum-sealed bag. Drizzle a tablespoon of olive oil into each bag to help with flavor and juiciness.
  4. Seal the bags using a vacuum sealer or the water displacement method (submerging the bag in water while leaving the opening above the water, then sealing it once the air is pushed out).
  5. Submerge the sealed bags in the preheated water bath and cook for 1 to 2 hours, depending on the thickness of the steaks. This gentle cooking method will result in evenly cooked and tender steaks.
  6. Once the cooking time is up, remove the bags from the water bath and carefully open them.
  7. Preheat a skillet over high heat and add a tablespoon of olive oil. Once the skillet is hot, sear the steaks for about 1-2 minutes on each side to develop a flavorful crust. You can also use a grill or a blowtorch for searing if preferred.
  8. Transfer the sirloin steaks to a cutting board and let them rest for a few minutes.
  9. Slice the steaks against the grain and serve immediately.
