Classic Meatloaf with Glaze

Ingredients:

  • 2 pounds (900g) ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup ketchup (plus extra for topping)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, 1/2 cup ketchup, chopped onion, minced garlic, beaten eggs, Worcestershire sauce, salt, black pepper, dried thyme, and dried oregano. Mix well until all ingredients are evenly incorporated.
  3. Transfer the meat mixture to a greased loaf pan, pressing it down to form an even loaf shape.
  4. In a small bowl, whisk together the ingredients for the glaze: 1/2 cup ketchup, brown sugar, and Dijon mustard.
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Place the loaf pan in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (71°C) on a meat thermometer.
  7. Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
